  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 700g)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme or fresh sprigs
  • 1 teaspoon dried rosemary, crushed (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 medium carrots, peeled and cut into 1-inch pieces
  • 1 medium zucchini, sliced into thick half-moons
  • 1 red bell pepper, chopped
  • 1 small red onion, quartered
  • 1 cup baby potatoes, halved (Yukon Gold or red potatoes)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels.
  2. In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, thyme, rosemary, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin where possible.
  4. Let the chicken marinate at room temperature for 15 minutes while prepping the vegetables.
  5. Toss the carrots, zucchini, bell pepper, onion, and baby potatoes in a bowl with olive oil, salt, and pepper. Set aside.
  6. Heat a large oven-safe skillet over medium-high heat.
  7. Add the chicken thighs skin-side down and sear without moving for 6-8 minutes until the skin is golden brown and crispy.
  8. Flip the chicken and cook the other side for 3-4 minutes to brown slightly.
  9. Arrange the prepared vegetables around the chicken in a single layer in the skillet.
  10. Transfer the skillet to a preheated oven at 425°F (220°C).
  11. Roast for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and caramelized.
  12. Remove the skillet from the oven and let the chicken rest for 5 minutes.
  13. Sprinkle chopped fresh parsley over the chicken and vegetables.
  14. Serve the chicken and vegetables together, spooning some pan juices over the top.

Notes

Pat chicken skin dry before seasoning to ensure crispiness. Use medium-high heat for searing and avoid moving chicken too soon. Do not overcrowd the pan to prevent steaming vegetables. Rest chicken after roasting to redistribute juices. If vegetables brown too fast, loosely cover pan with foil halfway through roasting. For extra lemon brightness, squeeze fresh lemon juice over dish before serving. Reheat leftovers in a skillet to maintain crispy skin.
