Easy One-Pan Lemon Garlic Butter Salmon Recipe with Asparagus for Perfect Dinner

  • 4 salmon fillets (about 6 oz each), skin-on preferred
  • 1 bunch fresh asparagus (about 12 oz), trimmed and washed
  • 4 tablespoons unsalted butter
  • 3 cloves fresh garlic, minced
  • Juice of 1 large lemon
  • Zest of 1 large lemon
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the woody ends off the asparagus stalks (about 1-2 inches from the bottom). Toss them in a bowl with 1 tablespoon olive oil, a pinch of salt, and black pepper. Set aside.
  3. Pat dry 4 salmon fillets with paper towels; season both sides generously with salt and pepper.
  4. In a small saucepan or microwave-safe bowl, melt 4 tablespoons unsalted butter gently. Stir in minced garlic and cook on low heat for about 1-2 minutes until fragrant but not browned. Remove from heat and mix in lemon juice and zest.
  5. Heat 1 tablespoon olive oil in your oven-safe skillet over medium-high heat. When shimmering, add the salmon fillets skin-side down. Cook without moving for about 3-4 minutes until the skin is crisp and golden.
  6. Flip the salmon carefully. Pour the garlic butter sauce evenly over the fillets.
  7. Add the asparagus around the salmon in the skillet. Spoon a bit of the sauce over the asparagus to coat.
  8. Transfer the skillet to the preheated oven. Roast for 8-10 minutes, depending on salmon thickness, until salmon is opaque and flakes easily and asparagus is tender-crisp.
  9. Remove from oven and spoon any pan juices over the salmon and asparagus. Garnish with chopped fresh parsley if desired.
  10. Serve immediately.

Notes

Be careful not to burn the garlic when making the butter sauce; cook on low heat and remove from heat as soon as fragrant. Pat salmon dry before searing to get a crispy skin. If desired, broil salmon for 1-2 minutes at the end for extra crispiness. For dairy-free version, substitute butter with vegan margarine or olive oil.
