  • 1 lb boneless, skinless chicken breasts or thighs (thinly sliced)
  • 2 bell peppers (any color, sliced into strips)
  • 1 large red onion (sliced into strips)
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Small flour or corn tortillas (warmed, for serving)
  • Your favorite salsa or pico de gallo (for serving)
  • Sour cream or Greek yogurt (for serving)
  • Fresh cilantro (chopped, for serving)
  • Shredded cheese (cheddar or Mexican blend, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). If using a toaster oven, preheat to 375°F (190°C).
  2. Slice the chicken into thin strips, about 1/2-inch thick. Slice the bell peppers and red onion into similar-sized strips.
  3. In a large bowl, combine the sliced chicken, bell peppers, and onion. Drizzle with olive oil and sprinkle with chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated.
  4. Spread the mixture out in a single layer on a sheet pan. Avoid overcrowding to ensure proper roasting.
  5. Roast for 15 minutes. Remove the pan, flip everything over with tongs, and return to the oven.
  6. Roast for another 10-15 minutes, until the chicken is cooked through (internal temperature of 165°F / 74°C) and the peppers are tender with slightly blackened spots.
  7. Remove the pan from the oven and squeeze the juice of one lime over the top. Toss to combine.
  8. Warm the tortillas in the microwave for 15 seconds wrapped in a damp paper towel, or directly on a gas burner for a few seconds on each side.
  9. Spoon the fajita mixture onto warm tortillas and top with salsa, sour cream, cheese, and cilantro. Serve immediately.

Notes

For extra crispy edges, switch the oven to broil for the last 2 minutes of cooking. Watch closely to avoid burning. If using a toaster oven, reduce temperature to 375°F (190°C). Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
