  • 1 pound (450g) fresh strawberries, hulled and sliced
  • 1 cup (150g) fresh blueberries
  • 1 cup (150g) fresh raspberries (optional)
  • 1 store-bought or homemade sponge cake or pound cake, cut into 1-inch cubes
  • 8 ounces (225g) mascarpone cheese, softened
  • 1 cup (240ml) heavy cream, cold
  • 1/3 cup (40g) powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon berry liqueur or orange juice (optional, for soaking cake cubes)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Rinse all the berries gently under cold water and pat dry with paper towels. Hull and slice strawberries into thin pieces. Set aside about 1/3 of each berry for the top garnish.
  2. Cut your sponge or pound cake into roughly 1-inch cubes. Lightly drizzle with berry liqueur or orange juice to keep it moist and add flavor. Let the cubes soak for 2–3 minutes but not too long or they’ll get soggy.
  3. In a mixing bowl, beat the mascarpone cheese until smooth but not runny. In a separate bowl, whip the cold heavy cream with powdered sugar and vanilla extract until soft peaks form. Gently fold the whipped cream into the mascarpone until fully combined and fluffy.
  4. Start with a layer of cake cubes at the bottom of your trifle bowl. Then add a generous layer of the mascarpone cream, followed by a layer of mixed berries. Repeat the layers — cake, cream, berries — until you reach the top of the bowl.
  5. Finish with the reserved berries artfully arranged on top, and garnish with fresh mint leaves if desired.
  6. Cover the trifle with plastic wrap and refrigerate for at least 2 hours to let the flavors meld and the cream set.

Notes

Keep mascarpone and cream cold for best whipping results. Avoid over-soaking cake cubes to prevent sogginess. Use fresh berries for best flavor and texture. Can substitute mascarpone with coconut cream for dairy-free and gluten-free cake options are available.
