  • 1 cup fresh raspberries
  • 1 cup fresh kiwi slices or green grapes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet or pizza pan with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes using a mixer.
  3. Add the egg and vanilla extract to the creamed mixture, beating until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mix to the wet ingredients, mixing on low speed just until combined.
  5. Press the dough evenly into the prepared pan to about ¼ inch (6 mm) thick.
  6. Bake the crust for 15-18 minutes until lightly golden around the edges but still soft in the center.
  7. Cool the crust completely on a wire rack, about 30 minutes.
  8. Prepare the cream cheese filling by beating the softened cream cheese until smooth. Add powdered sugar and vanilla extract, then beat until creamy. Slowly mix in heavy cream or milk until spreadable.
  9. Spread the cream cheese mixture evenly over the cooled crust to about ¼ inch thick.
  10. Arrange the fruit to mimic the American flag: place blueberries in the top-left corner, create red stripes with sliced strawberries and raspberries, and optionally add kiwi slices or green grapes for green accents.
  11. Chill the fruit pizza for at least 30 minutes before slicing.
