Eggnog Snickerdoodles Recipe Easy Soft Chewy Holiday Cookies

  • 1 teaspoon baking soda
  • ½ teaspoon cream of tartar
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon freshly grated nutmeg
  • ¾ cup (170g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120ml) eggnog
  • 1 teaspoon vanilla extract
  • ¼ cup (50g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • ¼ teaspoon ground nutmeg (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together 2 ¾ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon cream of tartar, ½ teaspoon salt, 1 teaspoon ground cinnamon, and ½ teaspoon freshly grated nutmeg. Set aside.
  3. In a large bowl, beat ¾ cup softened unsalted butter with 1 ½ cups granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  4. Beat in 2 large eggs, one at a time, then add ½ cup eggnog and 1 teaspoon vanilla extract. Mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  6. In a small bowl, mix ¼ cup granulated sugar, 1 tablespoon ground cinnamon, and ¼ teaspoon ground nutmeg for the coating.
  7. Using a cookie scoop or tablespoon, scoop dough and roll into balls about 1 ½ inches in diameter. Roll each ball generously in the cinnamon-nutmeg sugar coating and place them about 2 inches apart on the baking sheets.
  8. Bake for 10-12 minutes, until edges are set but centers still look soft. Cookies will firm up as they cool.
  9. Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

If dough is too sticky, chill for 15-20 minutes before rolling. Use room-temperature eggs for tender crumb. Avoid overmixing to keep cookies chewy. Freshly grated nutmeg enhances flavor. Remove cookies from oven when edges are set but centers are still soft to maintain softness after cooling. Dough can be frozen shaped into balls and baked from frozen with a couple extra minutes baking time.
