Flavorful Grilled Peach and Burrata Flatbread

A quick and easy grilled flatbread topped with smoky caramelized peaches, creamy burrata, and a homemade balsamic reduction drizzle. Perfect for a light, memorable summer meal or appetizer.

  • 2 flatbreads (naan, pita, or artisan flatbread)
  • 3 ripe peaches, sliced into 1/2-inch thick slices
  • 8 oz fresh burrata cheese
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup (120 ml) balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Fresh basil or mint leaves
  • Salt and freshly ground black pepper
  • Optional: squeeze of fresh lemon juice

Instructions

  1. Prepare the balsamic reduction: In a small saucepan, combine 1/2 cup balsamic vinegar and 1 tablespoon honey or brown sugar. Simmer over medium-low heat for 10-15 minutes, stirring occasionally, until thick and syrupy. Set aside to cool.
  2. Rinse and pat dry peaches. Slice into 1/2-inch thick slices. Optionally, squeeze lemon juice over slices to brighten flavor and prevent browning.
  3. Lightly brush both sides of peach slices and flatbreads with extra virgin olive oil.
  4. Preheat grill or grill pan to medium-high heat (around 375°F / 190°C).
  5. Grill peach slices for 2-3 minutes per side until tender with grill marks, avoiding overcrowding.
  6. Warm flatbreads on the grill for 1-2 minutes per side until warmed through and edges are crisp.
  7. Place warm flatbreads on serving plates. Top immediately with grilled peach slices and torn chunks of burrata cheese.
  8. Season with salt and freshly ground black pepper.
  9. Scatter torn basil or mint leaves over the top.
  10. Drizzle generously with the cooled balsamic reduction.
  11. Serve immediately while burrata is creamy and peaches are warm.

Notes

Use medium-high heat to avoid burning peaches. Brush peaches and flatbread with olive oil to prevent sticking. Assemble flatbread just before serving to keep burrata creamy and flatbread crisp. Homemade balsamic reduction is preferred over store-bought glaze for better flavor control. For dairy-free, substitute burrata with cashew or vegan cheese. For gluten-free, use gluten-free flatbread or cauliflower crust.
