A delicious flatbread featuring smoky grilled peaches, creamy burrata cheese, and a sweet-spicy hot honey drizzle. Perfect for a quick, satisfying late summer meal or entertaining.

  • 34 ripe peaches, sliced into ½ inch thick wedges
  • 1 ball fresh burrata cheese
  • ½ cup raw honey
  • 1 teaspoon red chili flakes
  • Olive oil (extra-virgin) for brushing
  • Fresh basil or mint leaves (optional)
  • Lemon zest (optional)

Instructions

  1. In a small saucepan over low heat, combine ½ cup raw honey and 1 teaspoon red chili flakes. Warm gently for 3-5 minutes, stirring occasionally to infuse the heat. Do not boil. Set aside to cool slightly.
  2. Preheat grill or grill pan to medium-high heat. Brush grates or pan with olive oil to prevent sticking.
  3. Slice peaches into thick wedges about ½ inch thick, leaving skin on.
  4. Lightly brush peach slices and both sides of flatbreads with olive oil.
  5. Grill peach wedges for 3-4 minutes per side until grill marks appear and peaches soften but are not mushy.
  6. Grill flatbreads for 1-2 minutes per side until warmed through and slightly crisp, watching closely to avoid charring.
  7. Transfer grilled flatbreads to a serving board. Tear burrata into chunks and scatter over the warm flatbreads.
  8. Arrange grilled peach slices on top, then sprinkle with torn fresh basil or mint leaves and lemon zest if using.
  9. Drizzle the warm hot honey evenly over the flatbreads, ensuring it is warm but not hot enough to melt the cheese completely.
  10. Cut into wedges and serve immediately.

Notes

Do not boil the honey when warming to avoid bitterness. Grill peaches until grill marks form but avoid overcooking to keep them juicy. Assemble just before serving to keep flatbread crisp and burrata fresh. Adjust chili flakes to taste for desired heat level. Burrata can be substituted with fresh mozzarella or ricotta. For vegan version, use plant-based cheese and maple syrup with chili flakes instead of honey.
