  • 4 ripe but firm peaches, halved and pitted
  • 1 cup mascarpone cheese, room temperature
  • 2 tablespoons honey
  • 1/4 cup shelled pistachios, roughly chopped
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your grill or grill pan to medium-high heat, around 375°F (190°C).
  2. Wash and dry ripe peaches, then slice them in half and remove the pits carefully. Brush the cut sides lightly with olive oil.
  3. Place the peaches cut side down on the grill. Cook undisturbed for about 3-4 minutes until grill marks appear and the fruit softens slightly but still holds shape.
  4. Flip and grill the skin side for another 2 minutes.
  5. While the peaches grill, whisk together mascarpone, honey, vanilla extract, and lemon juice in a bowl until smooth and creamy.
  6. Transfer grilled peaches to a serving plate, cut side up. Spoon a generous dollop of the honey mascarpone on each half.
  7. Sprinkle chopped pistachios over the top.
  8. Serve immediately while warm.

Use firm but ripe peaches to avoid mushiness. Oil grill grates or pan to prevent sticking. Let peaches sit undisturbed for proper caramelization.
