  • 1 pound ground beef, 80/20 blend recommended for juiciness
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 23 Hatch chilies, roasted, peeled, and sliced
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon brown sugar (optional)
  • 4 slices sharp cheddar cheese
  • 4 brioche burger buns, toasted
  • Optional: lettuce, tomato slices, pickles
  • Your choice of condiments – mayo, mustard, or chipotle mayo

Instructions

  1. Preheat grill or broiler. Roast Hatch chilies on grill grates or baking tray under broiler, turning occasionally, until skin is blistered and blackened, about 8-10 minutes. Transfer to bowl and cover tightly to steam for 10 minutes.
  2. Peel off charred skin from chilies once cool enough to handle. Remove seeds if less heat is desired. Slice chilies into thin strips and set aside.
  3. Heat butter and olive oil in skillet over medium-low heat. Add sliced onions, sprinkle with salt and brown sugar. Stir frequently and cook slowly for 25-30 minutes until onions are soft and golden brown. Add water or lower heat if onions stick.
  4. In a bowl, gently mix ground beef with salt, pepper, and garlic powder. Shape into 4 equal patties, making a slight indentation in the center of each to prevent puffing.
  5. Heat skillet or grill to medium-high. Cook patties about 4 minutes per side for medium doneness. During last minute, place cheddar slice on each patty and cover to melt cheese.
  6. Toast brioche buns on grill or in toaster until lightly golden.
  7. Assemble burgers by spreading preferred condiments on buns. Place cheesy patty on bottom bun, top with caramelized onions and roasted Hatch chilies, add optional fresh toppings, then cover with top bun.

Notes

Use 80/20 ground beef for juiciness. Roast Hatch chilies fresh if possible or use frozen. Slow caramelization of onions is key for sweetness. Indent patties to prevent puffing. Cover burgers to melt cheese quickly. For gluten-free, use lettuce wraps or gluten-free buns. Cheese can be swapped for pepper jack or dairy-free alternatives.
