Moist and tender red velvet cupcakes with a mildly spiced cocoa base and a tangy, creamy homemade cream cheese frosting. Perfect for last-minute celebrations and crowd-pleasing occasions.

  • ½ cup cake flour (60 g)
  • 2 tbsp unsweetened cocoa powder (preferably Dutch-processed)
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 1 tsp instant espresso powder (optional)
  • 1 cup granulated sugar (200 g)
  • ½ cup vegetable oil (120 ml)
  • 1 cup buttermilk (240 ml), room temperature (or 1 cup milk + 1 tbsp lemon juice)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring (liquid or gel)
  • 1 tsp white vinegar
  • 8 oz cream cheese, softened (225 g)
  • ½ cup unsalted butter, softened (115 g)
  • 3 cups powdered sugar, sifted (360 g)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, sift together all-purpose flour, cake flour, cocoa powder, baking soda, salt, cinnamon, and espresso powder. Whisk to combine evenly.
  3. In a large bowl, whisk granulated sugar and vegetable oil until combined. Add eggs one at a time, beating well after each addition. Stir in vanilla extract, red food coloring, and white vinegar.
  4. Pour in the buttermilk and mix until smooth, being careful not to overbeat.
  5. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until smooth and thick but pourable. Stop as soon as no flour streaks remain.
  6. Spoon the batter evenly into the cupcake liners, filling about 2/3 full.
  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Remove from oven and let cupcakes cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cupcakes cool, beat softened cream cheese and butter together until creamy and smooth (2-3 minutes). Gradually add powdered sugar on low speed, then increase speed and whip until fluffy and spreadable. Mix in vanilla extract and a pinch of salt.
  10. Once cupcakes are fully cooled, frost generously using a spatula or piping bag. Optionally, sprinkle with red sugar crystals or edible glitter.

Notes

Use room temperature ingredients for smooth batter and frosting. Sift dry ingredients to avoid clumps. Gel food coloring gives richer color than liquid. Avoid overmixing batter to keep cupcakes light. Chill frosting briefly if too soft before piping. Store leftovers in airtight container refrigerated up to 4 days or freeze up to 3 months.
