  • 4 cups fresh peaches, peeled, pitted, and chopped (about 67 medium peaches)
  • 1 to cups granulated sugar (organic cane sugar preferred)
  • 1 whole vanilla bean, split lengthwise (or 1 teaspoon pure vanilla extract as substitute)
  • 1 medium cinnamon stick
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon powdered or liquid pectin (optional for firmer set)

Instructions

  1. Prepare the peaches by washing them. Dip each peach in boiling water for about 30 seconds, then transfer immediately to an ice bath to loosen the skins. Peel, pit, and chop into roughly 1-inch pieces. This takes about 15 minutes.
  2. In a large heavy-bottomed pot, combine the chopped peaches, granulated sugar, lemon juice, cinnamon stick, and split vanilla bean pod (scrape the seeds into the pot and add the pod). Add pectin if using. Stir well and let sit for 10-15 minutes to macerate.
  3. Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent sticking. Reduce heat to low and simmer uncovered, stirring every few minutes and breaking down some peaches if a smoother texture is desired. Simmer for 30-40 minutes until jam thickens and coats the back of a spoon. Remove cinnamon stick and vanilla pod.
  4. Test the jam by placing a small spoonful on a chilled plate; if it wrinkles and doesn’t run quickly, it is ready. If too runny, continue simmering and test every 5 minutes.
  5. Ladle hot jam into sterilized glass jars, leaving about ¼ inch headspace. Wipe rims clean, seal with lids, and let cool to room temperature before refrigerating or processing in a hot water bath for longer storage.

Stir frequently to avoid burning. Let jam rest overnight to deepen flavors and thicken. Peeling peaches creates a smoother texture but can be skipped for rustic jam. Adjust sugar based on peach sweetness. Pectin is optional but helps with firmer set. Variations include swapping spices or sweeteners and adding bourbon for complexity.
