Ingredients

Scale
  • 1 pound ground beef (85% lean)
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon chipotle powder (optional)
  • Salt and pepper to taste
  • Individual servings of crunchy corn chips or Fritos
  • Shredded sharp cheddar cheese
  • Shredded iceberg lettuce
  • Diced tomatoes
  • Chopped green onions
  • Jalapeño slices (pickled or fresh)
  • Sour cream or Mexican crema
  • Fresh cilantro leaves
  • Fresh lime wedges
  • Optional extras: black beans, corn kernels, sliced olives

Instructions

  1. Dice the onion and tomatoes, mince the garlic, shred the lettuce and cheese, and chop any other toppings you plan to use. Arrange these in separate bowls for easy access.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced onions and cook until translucent, about 3-4 minutes.
  3. Add the garlic and cook for another 30 seconds until fragrant.
  4. Add the ground beef and break it apart with a wooden spoon. Cook until browned, about 7-8 minutes, stirring occasionally.
  5. Sprinkle in chili powder, cumin, smoked paprika, chipotle powder (if using), salt, and pepper. Stir well to coat the meat evenly. Cook for an additional 2 minutes to let the spices bloom.
  6. Place a handful of crunchy corn chips or Fritos into each individual serving cup. Spoon the warm seasoned beef over the chips.
  7. Layer on shredded cheese, lettuce, diced tomatoes, and any additional toppings you love. Add a dollop of sour cream or crema and finish with a squeeze of fresh lime and a sprinkle of cilantro.
  8. Serve immediately to keep chips crisp and toppings fresh. Keep meat warm if needed.

Notes

Warm serving cups slightly before assembly to prevent condensation and soggy chips. Do not overload chips at the bottom to avoid sogginess. Cook onions first to soften and sweeten, and toast spices briefly with meat for enhanced flavor. Keep heat moderate to avoid dry meat. Prepare meat a day ahead for deeper flavor if desired.
