A quick, zesty no-cook dip featuring black beans, fresh mango, and Tajín seasoning, perfect for summer gatherings and snacking.

  • 1 (15 oz / 425 g) can black beans, drained and rinsed
  • 1 cup (150 g) fresh corn kernels (or thawed frozen corn)
  • 1 cup (150 g) cherry tomatoes, quartered
  • 1 ripe mango, diced (about 1 cup / 165 g)
  • ½ red bell pepper, finely chopped
  • ¼ cup (40 g) red onion, finely chopped
  • 1 small jalapeño, seeded and minced
  • ¼ cup (15 g) fresh cilantro, chopped
  • 2 tablespoons (30 ml) extra virgin olive oil
  • Juice of 1 large lime (about 2 tablespoons / 30 ml)
  • 1 to teaspoons Tajín seasoning
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse and drain the black beans thoroughly to reduce saltiness.
  2. If using fresh corn, cut kernels off 1 ear; if frozen, thaw about 1 cup (150 g) of kernels.
  3. Quarter 1 cup (150 g) of cherry tomatoes.
  4. Dice 1 ripe mango (about 1 cup / 165 g).
  5. Finely chop ½ a red bell pepper, ¼ cup (40 g) of red onion, and 1 small jalapeño pepper (remove seeds for less heat).
  6. In a medium mixing bowl, combine black beans, corn, cherry tomatoes, mango, red bell pepper, onion, jalapeño, and chopped cilantro.
  7. Gently toss to distribute ingredients evenly without breaking up the mango.
  8. Drizzle 2 tablespoons (30 ml) of extra virgin olive oil and the juice of 1 large lime over the mixture.
  9. Sprinkle 1 to 1½ teaspoons of Tajín seasoning and season with salt and freshly ground black pepper to taste.
  10. Fold everything together gently, ensuring mango chunks stay intact and Tajín coats evenly.
  11. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld and chill (optional but recommended).
  12. Before serving, give the dip a final stir and adjust seasoning if needed.
