Instructions

  1. Rinse and prep cranberries: Sort through the fresh cranberries to remove any stems or bruised berries. Rinse under cold water and drain well (about 5 minutes).
  2. Zest and juice the orange: Using a microplane, zest one large orange carefully, avoiding the white pith. Cut the orange in half and juice it to yield about 1/4 cup (60 ml) of juice (3-4 minutes).
  3. Grate fresh ginger: Peel a small piece of fresh ginger root and finely grate about 1 tablespoon (about 2 minutes).
  4. Combine ingredients in saucepan: In a medium saucepan, combine cranberries, sugar, water, grated ginger, orange zest, and juice. Stir to mix evenly.
  5. Cook the relish: Place the saucepan over medium heat. Bring the mixture to a gentle boil, then reduce to a simmer. Cook uncovered for about 10 minutes, stirring occasionally until cranberries burst and mixture thickens slightly.
  6. Optional cinnamon addition: Stir in 1/4 teaspoon ground cinnamon halfway through cooking for added warmth.
  7. Cool and store: Remove from heat and let the relish cool to room temperature. Transfer to a clean jar or bowl, cover, and refrigerate for at least 2 hours before serving to let flavors meld.
