  • 1 small clove garlic, minced (optional)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon sugar (optional, balances acidity)

Instructions

  1. Wash and dry cucumbers thoroughly. Slice into thin rounds about 1/8 inch thick using a sharp knife or mandoline. Transfer to a large bowl. If cucumbers feel watery, sprinkle with a pinch of salt and let sit for 10 minutes, then drain any liquid.
  2. In a small bowl, whisk together sour cream, apple cider vinegar, mayonnaise, minced garlic (if using), sugar, salt, and black pepper until smooth and creamy.
  3. Pour the dressing over the sliced cucumbers. Add chopped fresh dill. Gently fold everything together with a spatula or wooden spoon, taking care not to crush the cucumbers.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  5. Before serving, taste and adjust salt, pepper, or vinegar as needed. Optionally add extra dill or a splash more vinegar to brighten the flavor.
