A refreshing, tangy, and subtly spicy hibiscus agua fresca with lime juice and a Tajin-rimmed glass, perfect for summer gatherings and cooling off on warm days.

Ingredients

Scale
  • 1 cup (15g) dried hibiscus flowers (hibiscus sabdariffa), rinsed
  • 6 cups (1.4 liters) water (4 cups for steeping, 2 cups for dilution)
  • Fresh lime juice from about 3 limes (approx. 3 tablespoons or 45 ml)
  • to ½ cup (65g to 100g) granulated sugar, agave syrup, or honey
  • About 2 tablespoons Tajin seasoning for rimming glasses
  • Pinch of salt (optional)
  • Ice cubes for serving

Instructions

  1. Rinse the dried hibiscus flowers under cold water to remove any dust or impurities.
  2. Bring 4 cups (950 ml) of water to a gentle boil in a large saucepan. Remove from heat, add the rinsed hibiscus flowers, cover, and steep for 15 minutes.
  3. Strain the hibiscus infusion through a fine mesh strainer or cheesecloth into a pitcher, discarding the petals. Press gently to extract flavor without bitterness.
  4. While the tea is still warm, stir in ⅓ to ½ cup (65g to 100g) of your chosen sweetener until dissolved.
  5. Add 2 cups (475 ml) of cold water to dilute the tea to taste and stir well.
  6. Mix in fresh lime juice from about 3 limes (3 tablespoons or 45 ml) and a pinch of salt if using. Adjust sweetness or lime as needed.
  7. Refrigerate the pitcher for at least 1 hour until thoroughly chilled.
  8. Prepare glasses by rubbing a lime wedge around the rim and dipping them into Tajin seasoning to coat evenly.
  9. Serve the chilled agua fresca over ice in the Tajin-rimmed glasses. Garnish with extra lime wedges if desired.

Notes

Do not over-boil hibiscus flowers to avoid bitterness. Sweeten while warm to dissolve completely. Use fresh lime juice for best flavor. Chill thoroughly before serving. Rim glasses with Tajin just before serving to keep spice fresh. Adjust sweetness and lime to taste. Can substitute sugar with agave, honey, coconut sugar, or maple syrup. Optional additions include fresh mint, basil, jalapeño, or fruit juices for variations.
