  • 1 cup strawberries, hulled and quartered
  • 1 cup blueberries, rinsed and drained
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup green grapes, halved
  • 1 cup kiwi, peeled and sliced
  • 1 orange, peeled and segmented
  • 1/2 cup (120 ml) chilled Prosecco or any dry sparkling wine
  • 2 tablespoons honey (raw or local honey preferred)
  • 1 tablespoon fresh lime juice (or lemon juice)
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Rinse and dry all the fresh fruit carefully. Hull and quarter the strawberries, halve the grapes, peel and slice the kiwi, and segment the orange. Place all the fruit in a large mixing bowl.
  2. In a small bowl or jar, combine the honey, fresh lime juice, chopped mint leaves, and vanilla extract if using. Whisk or shake vigorously until well blended.
  3. Pour the honey mint dressing over the fruit and gently toss to coat everything evenly, using light folding motions to avoid crushing the fruit.
  4. Just before serving, drizzle the chilled Prosecco over the fruit salad and give it one last gentle stir.
  5. Optional: Refrigerate for 15-20 minutes before serving if you prefer the salad chilled.

Notes

Add Prosecco last to keep the salad bubbly. Use ripe but firm fruit to avoid mushiness. Prepare fruit and dressing separately if making ahead. Substitute sparkling water or non-alcoholic sparkling juice for a kid-friendly version. For vegan, swap honey with maple syrup or agave.
