  • 1 pound fresh garlic scapes, trimmed and cut into 34 inch lengths
  • 2 tablespoons extra virgin olive oil
  • Zest of 1 medium lemon
  • Juice of 1/2 lemon (reserve the other half for serving)
  • 1 teaspoon sea salt (flaky or coarse)
  • 1/2 teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse garlic scapes under cold water and pat dry. Trim tough ends and cut into 3-4 inch lengths.
  3. In a mixing bowl, toss scapes with olive oil, lemon zest, juice of half a lemon, sea salt, black pepper, and optional red pepper flakes until evenly coated.
  4. Arrange scapes in a single layer on a rimmed baking sheet.
  5. Roast in the oven for 12 minutes, turning halfway through with tongs or a spatula for even browning. Scapes should be tender with lightly browned, slightly crisp edges.
  6. Remove from oven and transfer to a serving dish. Squeeze the remaining lemon half over the top and toss gently to coat.
  7. Serve immediately warm or at room temperature.

Notes

Trim tough ends of garlic scapes to avoid fibrous texture. Turn scapes halfway through roasting for even browning. Avoid overcrowding the pan to prevent steaming. Add lemon juice after roasting to preserve bright acidity. Leftover pan juices are flavorful and can be drizzled over other dishes.
