A refreshing and unique summer drink combining fresh strawberries, lemon juice, basil, sugar, and sparkling water for a light and fizzy homemade lemonade.

Ingredients

Scale
  • 1 ½ cups fresh strawberries, hulled and quartered (about 225 g)
  • ¾ cup fresh lemon juice (about 180 ml)
  • ⅓ cup granulated sugar (about 65 g)
  • 1012 fresh basil leaves
  • 4 cups cold sparkling water (about 1 liter)
  • Ice cubes
  • Optional: mint leaves
  • Optional: honey or agave syrup

Instructions

  1. Rinse the strawberries thoroughly, hull them, and cut into quarters. Rinse the basil leaves and pat dry. (5 minutes)
  2. In a blender, combine the strawberries, basil leaves, granulated sugar, and fresh lemon juice. Blend until smooth and fragrant, about 30-45 seconds. (5 minutes)
  3. Optional: Pour the blended mixture through a fine mesh sieve into a large pitcher to remove seeds and basil bits. Use a spoon to press out all the juice and pulp. Skip this step if you prefer a pulpy texture. (5 minutes)
  4. Pour cold sparkling water into the pitcher and stir gently to combine. Taste and adjust sweetness if needed by adding more sugar or honey while stirring. (2 minutes)
  5. Add plenty of ice cubes to the pitcher or serve lemonade over ice-filled glasses. Garnish with a lemon wheel and a sprig of fresh basil. Serve immediately.

Notes

Blend strawberries and basil first without sparkling water to avoid fizzing over. Add sparkling water last and stir gently to preserve bubbles. Avoid over-blending basil to prevent bitterness. Keep sparkling water cold and add just before serving to maintain fizz. The lemonade keeps well refrigerated for up to 24 hours but bubbles will fade. For longer fizz, freeze lemonade into ice cubes and add to glasses.
