Fresh Watermelon Feta Mint Salad with Balsamic Glaze

A refreshing summer salad combining juicy watermelon, salty feta, fresh mint, and a tangy balsamic glaze. Quick and easy to prepare, perfect for light meals or entertaining.

Ingredients

  • 4 cups watermelon, cubed (seedless if possible, ripe)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped or torn
  • 23 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Pinch of sea salt (optional, taste feta first)

Instructions

  1. Cut about 4 cups (roughly 600 grams) of seedless watermelon into uniform 1-inch (2.5 cm) cubes. Remove any seeds if present. Pat the cubes dry gently with paper towels to remove excess moisture.
  2. Measure out 1 cup (about 150 grams) of crumbled feta cheese. Break into small pieces if needed.
  3. Rinse and dry about 1/4 cup (10 grams) of fresh mint leaves. Tear or roughly chop them to release aroma without bruising.
  4. In a large mixing bowl, combine the watermelon cubes, crumbled feta, and mint leaves. Drizzle with 1 tablespoon (15 ml) of extra virgin olive oil and gently toss using salad tongs or two large spoons.
  5. Lightly grind fresh black pepper over the salad to taste and add a pinch of sea salt if needed. Toss lightly again to distribute flavors.
  6. Just before serving, drizzle 2-3 tablespoons (30-45 ml) of balsamic glaze over the salad.
  7. Serve immediately to keep watermelon crisp and mint fresh. If prepping ahead, keep balsamic glaze separate and add before serving.

Notes

Be gentle when tossing to avoid breaking watermelon cubes and making the salad watery. Serve chilled or slightly cold for best flavor and texture. Keep balsamic glaze separate if preparing ahead to prevent sogginess.
