Fresh Watermelon Feta Mint Salad Recipe with Easy Balsamic Reduction

A refreshing summer salad combining juicy watermelon, creamy feta, fresh mint, and a sweet-tangy balsamic reduction. Perfect for light meals or side dishes.

  • 4 cups fresh seedless watermelon, cut into 1-inch cubes
  • 1 cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, chopped or torn
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Optional: fresh cracked black pepper
  • Optional: 1 tablespoon extra virgin olive oil

Instructions

  1. Cut the fresh watermelon into roughly 1-inch cubes, removing any seeds if necessary. Place in a large mixing bowl. (Approx. 10 minutes)
  2. Crumble about 1 cup of feta cheese into bite-sized chunks and add to the watermelon.
  3. Rinse and dry fresh mint leaves, then chop or tear about ¼ cup and add to the bowl.
  4. In a medium saucepan, combine ½ cup balsamic vinegar and 1 tablespoon honey or brown sugar. Bring to a gentle boil over medium heat, then reduce to low and simmer, stirring occasionally, until thickened to a syrupy consistency, about 10-15 minutes.
  5. Remove the pan from heat and let the balsamic reduction cool slightly for about 5 minutes.
  6. Drizzle the balsamic reduction over the watermelon, feta, and mint mixture. Add optional 1 tablespoon extra virgin olive oil and fresh cracked black pepper if desired. Gently toss to combine without crushing the watermelon. (Approx. 3 minutes)
  7. Transfer the salad to a serving dish and serve immediately or chill for 10-20 minutes before serving.

Notes

Chill watermelon beforehand for a cooler salad. Avoid over-reducing balsamic vinegar to prevent bitterness. Add balsamic reduction just before serving to keep watermelon crisp. Use a squeeze bottle for artistic drizzle. Store leftovers separately and combine before serving.
