Ingredients

  • Whole wheat or spinach wraps (8-inch size)
  • Cooked chicken breast, shredded or chopped (about 2 cups / 300g)
  • Romaine lettuce, chopped (2 cups / 100g)
  • Parmesan cheese, shaved or grated (1/4 cup / 25g)
  • Greek yogurt (1/2 cup / 120g), plain and unsweetened
  • Anchovy paste (1 teaspoon)
  • Fresh lemon juice (1 tablespoon)
  • Garlic, minced (1 clove)
  • Dijon mustard (1 teaspoon)
  • Olive oil (1 tablespoon)
  • Worcestershire sauce (1 teaspoon)
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Dressing: In a medium mixing bowl, combine 1/2 cup (120g) Greek yogurt, 1 teaspoon anchovy paste, 1 tablespoon fresh lemon juice, 1 minced garlic clove, 1 teaspoon Dijon mustard, 1 tablespoon olive oil, and 1 teaspoon Worcestershire sauce. Whisk vigorously until smooth and creamy. Taste and season with salt and freshly ground black pepper to your liking. This should take about 5 minutes.
  2. Prep the Chicken: If using leftover rotisserie or grilled chicken, shred or chop into bite-sized pieces (about 2 cups / 300g). If cooking fresh chicken breast, season with salt and pepper and cook in a skillet over medium heat for 5-7 minutes per side until cooked through and juices run clear. Let rest before slicing thinly.
  3. Wash and Chop Lettuce: Rinse 2 cups (100g) romaine lettuce under cold water and pat dry thoroughly—wet lettuce will make the wrap soggy. Chop into bite-sized pieces.
  4. Assemble the Wrap: Lay an 8-inch whole wheat wrap flat on a clean surface. Spread about 2 tablespoons of the Greek yogurt Caesar dressing evenly over the wrap, leaving a small border around the edges.
  5. Add Fillings: Layer half of the chopped romaine lettuce (about 1 cup), then spread the shredded chicken evenly on top. Sprinkle with 2 tablespoons of shaved Parmesan cheese.
  6. Roll It Up: Fold one side of the wrap over the filling, then fold the edges inward and continue rolling tightly until closed. If desired, lightly toast the wrap in a skillet over medium heat for 1-2 minutes per side to seal and warm it up.
  7. Serve: Slice the wrap in half diagonally for easier eating. Serve immediately or wrap tightly in foil or parchment paper for lunch on the go.

Notes

Use cold, dry lettuce to avoid sogginess. Don’t overdo the dressing to make rolling easier. Toast the wrap gently for a crispy outside without drying the inside. Anchovy paste is recommended for authentic flavor but can be substituted with soy sauce or omitted. Store wraps refrigerated up to 24 hours; keep dressing separate for best texture.
