  • 3 medium bell peppers (mixed colors: red, green, yellow), diced
  • 1 cup uncooked brown rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups chicken broth
  • 2 tbsp tomato paste
  • 1 tbsp Italian seasoning
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prep the vegetables: wash and dice the bell peppers, finely chop the onion, and mince the garlic.
  2. Heat olive oil in a large Dutch oven over medium heat. Add ground turkey and cook until browned, about 6 to 8 minutes. Drain excess fat if needed.
  3. Add onion and garlic to the pot with the turkey. Sauté until softened and fragrant, about 3 minutes.
  4. Add diced bell peppers and cook for another 2 minutes until they start to soften.
  5. Stir in tomato paste and diced tomatoes, mixing well to coat the meat and vegetables.
  6. Add Italian seasoning, smoked paprika, salt, and pepper. Pour in chicken broth and stir to combine.
  7. Add uncooked brown rice. Bring soup to a boil, then reduce heat to low, cover, and simmer gently for about 35 minutes, stirring occasionally to prevent sticking.
  8. Taste and adjust seasoning as needed. If soup is too thick, add a splash of broth or water to loosen.
  9. Serve hot, garnished with fresh parsley if desired.

Notes

If rice is not fully cooked after 35 minutes, add more broth and cook longer. Stir occasionally to prevent rice from sticking. For a vegetarian version, substitute ground turkey with lentils or plant-based crumbles. Use gluten-free broth and tomato paste to keep it gluten-free. Adding a splash of lemon juice or vinegar can brighten the flavor if it tastes flat.
