  • 4 oz (115 g) cream cheese, softened
  • 10 slices bacon, cut in half
  • 1/2 teaspoon garlic powder
  • Pinch of freshly ground black pepper
  • Optional: 2 tablespoons chopped nuts (pecans or walnuts)
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a mixing bowl, combine the softened cream cheese with garlic powder and freshly ground black pepper. Fold in chopped nuts if using.
  3. Using a small spoon or piping bag, stuff each pitted date with about 1 teaspoon (5 g) of the cream cheese mixture. Avoid overfilling.
  4. Wrap each stuffed date with half a slice of bacon, securing the ends underneath if needed. Place seam-side down on the baking sheet.
  5. Bake for 15-20 minutes, turning the dates halfway through to ensure even crisping. The bacon should be golden and crispy but not burnt.
  6. Remove from the oven and let the dates rest for 5 minutes on the baking sheet.
  7. Garnish with fresh herbs if desired and serve warm or at room temperature.

Watch the bacon closely toward the end of baking to avoid burning. Turning the dates halfway ensures even crisping. Letting the dates rest after baking helps the bacon crisp up and the cheese set. For a dairy-free version, use vegan cream cheese and turkey or plant-based bacon. You can prepare the wrapped dates a day ahead and refrigerate before baking. Drizzling maple syrup on bacon before baking adds a caramelized touch.
