  • 6 slices bacon, cooked and crumbled (optional)
  • 1 large bag (about 10 ounces) thick and sturdy tortilla chips
  • 3 stalks green onions, thinly sliced
  • Sour cream, for serving
  • A handful fresh cilantro, chopped (optional)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice jalapeños in half lengthwise and carefully remove seeds and membranes (wear gloves if sensitive).
  3. In a mixing bowl, combine softened cream cheese, 1 cup shredded cheddar, smoked paprika, garlic powder, salt, and pepper. Mix until smooth.
  4. Fill each jalapeño half with the cream cheese mixture and set aside.
  5. Spread a generous layer of tortilla chips evenly on a baking sheet or oven-safe pan.
  6. Scatter about 1½ cups shredded smoked brisket evenly over the chips.
  7. Place the filled jalapeño halves on top of the brisket and chips, nestling them in to prevent sliding.
  8. Sprinkle the remaining cheddar and Monterey Jack cheese over everything.
  9. Optionally, crumble cooked bacon over the top for extra smoky flavor.
  10. Bake in the preheated oven for 12-15 minutes until cheese is fully melted and bubbling with light golden edges.
  11. Remove from oven and garnish with sliced green onions and fresh cilantro.
  12. Serve with dollops of sour cream on the side or drizzled over the nachos.
