  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 34 stalks green onions, thinly sliced
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon toasted sesame oil
  • Optional: pinch of black pepper or red pepper flakes

Instructions

  1. Rice the cauliflower by chopping it into chunks and pulsing in a food processor until it resembles rice grains, or grate using a box grater. Set aside about 4 cups (560g) of cauliflower rice.
  2. Mince 2 cloves of garlic and thinly slice 3-4 green onions.
  3. Heat 1 tablespoon of oil (coconut or vegetable) over medium-high heat in a large skillet or wok. Pour in the beaten eggs and scramble gently until just cooked through but still soft. Transfer the eggs to a plate and set aside.
  4. Add another teaspoon of oil to the skillet, then toss in the minced garlic. Stir quickly for about 30 seconds until fragrant, being careful not to burn it.
  5. Add the cauliflower rice and cook for 5-7 minutes, stirring often, until it softens slightly but still has a bit of bite. Avoid overcooking to prevent mushiness.
  6. Return the cooked eggs to the skillet, stirring them into the cauliflower rice.
  7. Drizzle in 2 tablespoons of soy sauce or tamari and 1 teaspoon of toasted sesame oil. Sprinkle the sliced green onions on top and stir everything together. Cook for another minute to combine flavors.
  8. Taste and adjust seasoning with extra soy sauce or pepper if needed. Serve hot straight from the pan.

Notes

Avoid overcrowding the pan to prevent soggy cauliflower. Cook in batches if needed. Use toasted sesame oil at the end for best aroma. Scramble eggs separately to keep them light and fluffy. Thaw and drain frozen cauliflower rice before cooking to avoid excess moisture.
