Ingredients

Scale
  • 1 1/3 cups (160g) all-purpose flour, sifted
  • 1/3 cup (35g) unsweetened cocoa powder (Valrhona or Ghirardelli recommended)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1/3 cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 2/3 cup (160ml) buttermilk, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder (optional)
  • 1 tablespoon black gel food coloring
  • 1 cup (227g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted (for frosting)
  • 23 tablespoons (30-45ml) whole milk or heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1/2 teaspoon black gel food coloring (for gray spider web lines)
  • White royal icing or white chocolate for spider web decoration (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners and set aside.
  2. In a large bowl, sift together flour, cocoa powder, baking soda, and salt. Whisk to combine evenly.
  3. In a separate bowl, beat sugar and vegetable oil until combined. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract, buttermilk, espresso powder, and black gel food coloring until smooth and uniformly black.
  5. Slowly add dry ingredients to wet mixture, folding gently with a rubber spatula. Avoid overmixing.
  6. Spoon batter evenly into liners, filling each about two-thirds full.
  7. Bake for 18-22 minutes. Check at 18 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  8. Cool cupcakes in pan for 5 minutes, then transfer to a cooling rack to cool completely.
  9. Beat softened butter on medium speed until creamy (about 2 minutes). Gradually add sifted powdered sugar, alternating with milk or cream until smooth and spreadable.
  10. Mix in vanilla extract. Tint a small portion of frosting with black gel food coloring to create gray lines.
  11. Using a piping bag fitted with a round tip, swirl white frosting onto each cupcake.
  12. Pipe concentric circles of gray frosting on top.
  13. Drag a toothpick gently from the center outward through the circles to form the spider web pattern.
  14. Optionally, add small candy spiders or edible decorations to complete the spooky look.

Notes

Use black gel food coloring for the best rich black color; liquid colors may produce muddy gray. Avoid overmixing batter to keep cupcakes tender. Cool cupcakes completely before frosting to prevent melting. Practice spider web design on parchment paper if new to piping. For dairy-free, swap buttermilk with almond milk plus lemon juice and use vegan butter. For gluten-free, substitute half the flour with almond flour.
