  • 1 teaspoon ground cinnamon
  • 1 tablespoon apple cider vinegar
  • 1/2 cup water (for roasting pan)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Score the ham’s surface with shallow diagonal cuts about 1/8 inch deep in a diamond pattern across the fat layer.
  3. Insert whole cloves into the scored intersections evenly.
  4. Place the ham fat side up on a rack in a roasting pan and pour 1/2 cup water into the pan.
  5. In a bowl, whisk together honey, brown sugar, Dijon mustard, ground cinnamon, and apple cider vinegar until smooth.
  6. Brush a generous layer of glaze over the ham, covering all scored surfaces and cloves.
  7. Cover the ham loosely with aluminum foil and roast for about 1 hour and 15 minutes (approximately 10 minutes per pound), basting with more glaze every 20 minutes.
  8. Remove the foil during the last 15 minutes to allow the glaze to caramelize and become sticky, watching carefully to avoid burning.
  9. Check that the internal temperature reaches 140°F (60°C) for pre-cooked hams.
  10. Rest the ham for 15 minutes before slicing to allow juices to redistribute.
