  • 1.5 oz (45 ml) dark rum
  • 0.5 oz (15 ml) apple brandy or Calvados (optional)
  • 1 tbsp (15 ml) caramel syrup
  • 0.5 oz (15 ml) freshly squeezed lemon juice
  • 1 cinnamon stick per drink
  • A pinch of ground cinnamon (optional, for garnish)
  • Ice cubes as needed
  • Thin apple slice for garnish

Instructions

  1. Chill your rocks glass in the freezer or fill it with ice water for about 5 minutes.
  2. In a cocktail shaker, combine apple cider, dark rum, apple brandy (if using), caramel syrup, and freshly squeezed lemon juice. Add ice cubes until the shaker is about two-thirds full.
  3. Secure the shaker lid and shake vigorously for about 15 seconds until the outside feels cold and slightly frosty.
  4. Remove the chilled rocks glass from the freezer and discard any ice water.
  5. Place a cinnamon stick on a fireproof surface or small dish and light one end with a long lighter or match until it smolders and releases steady smoke.
  6. Quickly invert the rocks glass over the smoldering cinnamon stick to trap the smoke inside. Let it sit for about 30 seconds to infuse the glass with the cinnamon aroma.
  7. Remove the glass from the cinnamon stick, discard the stick, and strain the shaken cocktail mixture into the smoke-infused glass over fresh ice cubes.
  8. Garnish with a thin apple slice on the rim and sprinkle a tiny pinch of ground cinnamon on top.

Notes

Use a dry cinnamon stick for better smoke. Light the cinnamon stick over a fireproof surface and trap the smoke quickly. Do not over-shake to preserve caramel notes. The cinnamon smoke aroma lasts about 1-2 minutes, so serve immediately. For non-alcoholic version, substitute rum and brandy with spiced apple tea or sparkling cider.
