  • 3 medium apples (Granny Smith preferred, peeled, cored, and thinly sliced)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/2 cup granulated sugar (for caramel sauce)
  • 3 tablespoons unsalted butter (room temperature, cut into pieces)
  • 1/4 cup heavy cream (warm)
  • 1/2 teaspoon sea salt flakes
  • 1 large egg (beaten, for egg wash)
  • Coarse sugar for sprinkling (optional)
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions

  1. Peel, core, and slice the apples into thin, even slices about 1/8 inch thick. Toss with lemon juice, sugar, cinnamon, nutmeg, and flour. Let sit for 10 minutes.
  2. Make the salted caramel sauce: In a medium saucepan over medium heat, melt sugar by stirring constantly until deep amber (5-7 minutes). Remove from heat, stir in butter until melted, then whisk in warm heavy cream until smooth. Stir in sea salt and set aside to cool slightly.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Roll out puff pastry sheets to about 12×12 inches each on a lightly floured surface. Transfer to the lined baking sheet.
  5. Spread a thin layer of salted caramel sauce over the center of the pastry, leaving a 2-inch border. Arrange apple slices on top in a slightly overlapping pattern. Drizzle another 2 tablespoons of caramel over the apples.
  6. Fold the edges of the pastry up and over the apples, pleating to create a rustic border. Brush exposed pastry with beaten egg and sprinkle with coarse sugar if using.
  7. Bake for 30-35 minutes until pastry is golden brown and puffed, and apples are tender.
  8. Cool on a rack for at least 15 minutes before slicing. Serve warm or at room temperature with vanilla ice cream or whipped cream if desired.

Notes

Keep puff pastry cold until baking to ensure flakiness. Stir sugar constantly when making caramel to avoid burning. Let galette rest before slicing to set juices. Can substitute pears or other fruits. For vegan version, use vegan butter and coconut cream and vegan puff pastry. Reheat leftovers in oven to maintain crispness; avoid microwave.
