  • Salt and freshly ground black pepper, to taste
  • 2 soft burger buns, lightly toasted
  • 2 slices sharp cheddar or American cheese (optional)
  • Unsalted butter, for toasting buns and caramelizing onions
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter (for onions)
  • Pinch of salt (for onions)
  • ½ cup mayonnaise
  • 1 teaspoon white truffle oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste (for truffle mayo)

Instructions

  1. Caramelize the Onions: Heat 2 tablespoons butter in a skillet over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring every few minutes, until onions are golden brown and fragrant (about 25-30 minutes). Add a splash of water if onions stick or brown too fast. Remove from pan and set aside.
  2. Prepare the Truffle Mayo: In a small bowl, mix ½ cup mayonnaise with 1 teaspoon truffle oil, 1 teaspoon lemon juice, and salt and pepper to taste. Whisk until smooth and refrigerate until ready to use.
  3. Form the Wagyu Patties: Divide Wagyu beef into 4 equal portions (about 4 oz / 113g each), loosely packed. Season both sides generously with salt and pepper just before cooking.
  4. Toast the Buns: Spread a little butter on cut sides of buns. Toast in skillet over medium heat until golden and crisp, about 1-2 minutes. Set aside.
  5. Cook the Wagyu Smash Burgers: Increase skillet heat to medium-high and add a small amount of oil to prevent sticking. Place one ball of Wagyu beef on skillet. Using a metal spatula, press down firmly to smash patty thin (about ¼ inch / 6 mm thickness). Cook 2-3 minutes until edges are dark brown and crispy. Flip patty, add cheese slice, and cook another 1-2 minutes until cheese melts and burger is cooked through. Repeat for remaining patties.
  6. Assemble the Burger: Spread a generous layer of truffle mayo on both toasted buns. Place cooked Wagyu patty on bottom bun. Top with caramelized onions. Cover with top bun and gently press to combine.
  7. Serve Immediately: Enjoy with crispy fries or a fresh salad.

Notes

Use a hot cast iron skillet for best crust. Keep patties loosely packed to avoid dense texture. Smash patties firmly and quickly for crispy edges. Butter buns before toasting to prevent sogginess. Assemble burgers just before serving to maintain texture. For dairy-free, use vegan mayo and skip cheese. Truffle salt can substitute truffle oil in mayo.
