Quick Beef and Broccoli Stir-Fry

A quick and easy 30-minute beef and broccoli stir-fry with a savory garlic-ginger soy sauce, perfect for busy weeknights.

  • 1 lb (450 g) flank steak or sirloin, thinly sliced against the grain
  • 4 cups (about 300 g) fresh broccoli florets, blanched
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup (60 ml) soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Optional: sliced green onions or toasted sesame seeds for garnish

Instructions

  1. Slice 1 lb (450 g) flank steak thinly against the grain into 1/4-inch (6 mm) strips. Toss with 1 tablespoon soy sauce and 1 teaspoon cornstarch mixed with 2 tablespoons water. Marinate for 10 minutes.
  2. Bring a pot of salted water to a boil. Blanch 4 cups (300 g) broccoli florets for 1-2 minutes until bright green and slightly tender. Drain and rinse under cold water. Set aside.
  3. In a small bowl, whisk together 1/4 cup (60 ml) soy sauce, 2 tablespoons oyster sauce, 1 teaspoon brown sugar, 1 teaspoon sesame oil, minced garlic, and grated ginger. Set aside.
  4. Heat 2 tablespoons vegetable oil in a wok or large skillet over medium-high heat until shimmering. Add marinated beef in a single layer and stir-fry for 2-3 minutes until browned but not fully cooked. Remove beef and set aside.
  5. In the same pan, add more oil if needed. Stir-fry minced garlic and ginger from the sauce mixture for 30 seconds until fragrant.
  6. Return beef and blanched broccoli to the pan. Pour sauce over and stir-fry for 2-3 minutes until sauce thickens and coats ingredients.
  7. Taste and adjust seasoning if needed. Garnish with sliced green onions or toasted sesame seeds if desired. Serve immediately with steamed rice or noodles.

Notes

Slice beef against the grain for tenderness. Blanch broccoli briefly and rinse with cold water to keep it crisp. Cook beef in batches to avoid steaming. Adjust sauce seasoning to taste. Use cornstarch slurry for a glossy sauce. For gluten-free, substitute tamari or coconut aminos for soy sauce and use gluten-free oyster sauce.
