  • 1 tablespoon olive oil
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Pinch of red pepper flakes (optional)
  • Fresh lemon wedges, for serving
  • Chopped fresh parsley or dill, for garnish

Instructions

  1. Make the glaze: In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, minced garlic, lemon juice, lemon zest, and red pepper flakes (if using). Set aside.
  2. Prep the salmon: Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
  3. Heat the pan: Place a grill pan or skillet over medium-high heat and add the olive oil. Heat until the oil shimmers and is almost smoking.
  4. Sear the salmon: Place the salmon fillets skin-side down (if using skin) in the hot pan. Cook undisturbed for 3-4 minutes until the edges start to turn opaque and the skin is crispy.
  5. Glaze and flip: Brush a generous layer of the honey mustard glaze onto the top of each fillet. Carefully flip the salmon over using tongs. Cook for another 2-3 minutes.
  6. Glaze the other side: Brush more glaze onto the now-exposed side of the salmon. Cook for another minute, then flip again if needed. The glaze should be sticky and slightly charred in spots.
  7. Check for doneness: The salmon is done when it flakes easily with a fork and the internal temperature reaches 125°F for medium-rare or 135°F for well-done.
  8. Rest and serve: Transfer the salmon to a plate and let it rest for 2 minutes. Squeeze fresh lemon juice over the top and sprinkle with chopped parsley or dill. Serve immediately with extra lemon wedges.

Notes

Get the pan screaming hot for a good sear. Don’t move the fish while searing. Watch the glaze carefully as honey burns quickly. Use room temperature salmon for even cooking. Double the glaze and reserve some for serving. Clean the pan immediately after cooking.
