Refreshing Blackberry Basil Lemonade Popsicles

These blackberry basil lemonade popsicles combine tart lemon, juicy blackberries, and fragrant basil for a refreshing summer treat that’s quick and easy to make.

Ingredients

  • 2 cups fresh blackberries (about 300 grams)
  • 10 to 12 fresh basil leaves, washed and lightly bruised
  • 1 cup freshly squeezed lemon juice (from 3 to 4 medium lemons, about 240 ml)
  • 1 cup water (240 ml)
  • 1/4 cup honey or agave syrup (60 ml), adjust to taste
  • Lemon zest from one lemon (optional)
  • Pinch of salt

Instructions

  1. Wash basil leaves and gently bruise them with your fingers to release oils. Rinse blackberries and pat dry.
  2. Juice the lemons until you get about 1 cup (240 ml) of fresh juice. Combine lemon juice, water, honey (or your chosen sweetener), lemon zest, and a pinch of salt in a mixing bowl. Stir until the honey dissolves completely. Taste and adjust sweetness if needed.
  3. In a blender, add blackberries and bruised basil leaves. Pour in the lemonade base. Pulse a few times until the mixture is well combined but still has some texture. For a seedless popsicle, strain the mixture through a fine mesh sieve into a bowl, pressing with a spoon to extract all the juice.
  4. Pour the blackberry lemonade mixture into your popsicle molds, leaving a small gap at the top for expansion. Insert the sticks and gently tap the mold on the counter to release air bubbles and even out the mixture.
  5. Place molds in the freezer and freeze until solid, at least 6 hours or ideally overnight. To unmold, run warm water on the outside of the molds for a few seconds; popsicles should slide out easily.

Notes

If in a hurry, use smaller molds for faster freezing. Stir the mixture halfway through freezing for a slushier texture. Bruising basil leaves gently releases more flavor without bitterness. For seedless popsicles, strain the mixture. Store popsicles in an airtight container for up to 2 weeks. Let popsicles sit a few minutes outside the freezer before eating for better flavor.
