A light, bubbly summer drink combining the floral sweetness of lavender honey, the tartness of fresh lemon juice, and the fruity burst of blueberries, perfect for cooling off on hot days.

Ingredients

Scale
  • 1 cup fresh or frozen blueberries (if frozen, thaw before using)
  • 2 tablespoons lavender honey (or regular honey as substitute)
  • ½ cup fresh lemon juice (from 23 lemons)
  • 1 cup water
  • 2 cups chilled soda water or sparkling water
  • Ice cubes as needed
  • Lavender sprigs or lemon slices for garnish (optional)

Instructions

  1. Rinse 1 cup of fresh blueberries under cold water and drain well. If using frozen, thaw and drain any excess liquid.
  2. Place blueberries in a large mixing bowl or pitcher. Using a muddler or the back of a spoon, gently press the berries to release their juices but do not pulverize completely.
  3. Juice 2-3 fresh lemons to get about ½ cup lemon juice. Pour the juice into the bowl with blueberries. Add 2 tablespoons lavender honey and 1 cup water. Stir well until the honey dissolves completely.
  4. Place the blueberry lemonade base in the refrigerator for at least 15 minutes to let flavors meld and cool down.
  5. Just before serving, pour 2 cups of chilled soda water or sparkling water into the pitcher. Stir gently to combine without losing too much fizz.
  6. Fill glasses or mason jars with ice cubes, pour the spritzer over the ice, and garnish with a sprig of lavender or a thin slice of lemon.

Notes

Crush blueberries lightly to release juice but keep texture. Add soda water just before serving to keep fizz fresh. Adjust honey sweetness before adding soda water. Use fresh lemon juice for best flavor. For vegan version, substitute honey with maple syrup or agave nectar. For adult version, add a splash of gin, vodka, or sparkling wine.
