A quick and easy homemade version of the Starbucks Strawberry Açaí Refresher, balancing tart açaí, sweet strawberries, and a subtle caffeine kick for a refreshing summer drink.

  • 1 cup (150 grams) fresh ripe strawberries, sliced thinly
  • ½ cup (120 ml) açaí juice or concentrate (unsweetened)
  • ½ cup (120 ml) white grape juice
  • 1 tablespoon (15 ml) green coffee extract (or ½ teaspoon matcha powder as alternative)
  • 1 cup (240 ml) cold filtered water or sparkling water
  • 1 tablespoon (15 ml) freshly squeezed lime juice (from 1 small lime)
  • Ice cubes, plenty to chill
  • Optional: 1 to 2 teaspoons agave syrup or honey for sweetness

Instructions

  1. Wash and hull the strawberries, then slice them thinly (about 1/8 inch or 3 mm thick). Squeeze fresh lime juice, removing any seeds.
  2. If using açaí juice, measure ½ cup (120 ml) and pour it into your pitcher. If using frozen açaí pulp, blend about ½ cup (85 grams) with a splash of water until smooth.
  3. Pour in ½ cup (120 ml) white grape juice, 1 cup (240 ml) cold water or sparkling water, and the lime juice. Stir gently to combine all liquids.
  4. Add 1 tablespoon (15 ml) green coffee extract and stir well. If using matcha powder, whisk ½ teaspoon with a small amount of water until smooth before adding.
  5. Taste the mixture and if desired, stir in 1 to 2 teaspoons of agave syrup or honey until dissolved.
  6. Drop the prepared strawberry slices into the pitcher, stirring gently to distribute evenly.
  7. Fill tall glasses with ice cubes, then pour the refresher over. Alternatively, cover and refrigerate the pitcher for 30 minutes to let flavors meld before serving.
  8. Garnish with a lime wedge or extra strawberry slice on the rim and serve.

Notes

Do not over-stir after adding strawberries to keep them visually appealing. Use sparkling water just before serving for a fizzy twist. Prepare base mix ahead and add fresh strawberries and ice before serving. Adjust sweetness gradually to taste.
