A fresh and flavorful cocktail combining ripe peaches, bourbon, and a subtly herbal thyme simple syrup, perfect for summer evenings and gatherings.

  • 2 ounces bourbon
  • ½ cup sugar
  • ½ cup water
  • 45 sprigs fresh thyme
  • Juice of half a lemon (about 1 tablespoon)
  • Club soda or sparkling water, about 2 ounces
  • Ice cubes
  • Fresh thyme sprigs and peach slices for garnish

Instructions

  1. Make the thyme simple syrup: Combine ½ cup sugar and ½ cup water in a small saucepan. Add 4-5 sprigs of fresh thyme. Heat over medium until sugar dissolves and mixture simmers gently. Simmer 2-3 minutes, remove from heat, steep thyme for 10 minutes, then strain and cool.
  2. Peel and slice 2 medium ripe peaches, removing pits and cutting into thin wedges.
  3. In a mixing glass, add sliced peaches and 1 tablespoon of thyme simple syrup. Gently muddle to release juices without pulverizing.
  4. Add 2 ounces bourbon and juice of half a lemon. Fill glass halfway with ice cubes.
  5. Stir vigorously for about 15 seconds to chill and combine flavors.
  6. Strain cocktail into an old-fashioned glass filled with fresh ice (optional to strain for smoother drink).
  7. Top with about 2 ounces club soda or sparkling water.
  8. Garnish with a fresh thyme sprig and a thin peach slice.

Notes

Do not over-muddle peaches to avoid gritty texture. Use fresh ripe peaches and fresh lemon juice for best flavor. Chill glasses before serving for extra refreshment. Thyme simple syrup can be made ahead and stored refrigerated up to one week. Adjust sweetness by varying syrup quantity. For a low-sugar alternative, use honey in syrup. Bourbon is naturally gluten-free but check labels if sensitive.
