A simple and reliable recipe for roasting a juicy turkey breast with a flavorful herb-butter crust and a rich, silky pan gravy. Perfect for weeknight dinners or small gatherings.

  • 3 to 4 pounds bone-in, skin-on turkey breast
  • 6 tablespoons unsalted butter, softened
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh parsley
  • 3 cloves garlic, minced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup low sodium chicken or turkey stock
  • 1 to 2 tablespoons all-purpose flour (or cornstarch for gluten-free)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine softened unsalted butter with minced garlic, chopped rosemary, thyme, parsley, salt, and pepper to form a fragrant, spreadable paste.
  3. Gently loosen the turkey skin by sliding your fingers or a spoon between the skin and the breast meat to create a pocket without tearing the skin.
  4. Spread about two-thirds of the herb butter evenly under the skin over the turkey breast meat.
  5. Rub the remaining butter on the outside skin, drizzle with olive oil, and sprinkle extra salt and pepper over the skin.
  6. Place the turkey breast skin-side up on a rack in your roasting pan.
  7. Roast uncovered for 60 to 75 minutes, or until the internal temperature reaches 160°F (71°C) at the thickest part of the breast. Start checking around 55 minutes.
  8. Remove from oven and tent loosely with foil. Let rest for at least 15 minutes.
  9. While the turkey rests, pour off excess fat from the roasting pan, leaving browned bits and about 2 tablespoons of fat. Place pan over medium heat on stovetop.
  10. Add flour to the pan drippings and whisk constantly for about 1 minute to cook out raw taste.
  11. Slowly whisk in the stock and bring to a gentle simmer. Stir until thickened and smooth, about 3-5 minutes. Add lemon juice if using, and season with salt and pepper to taste.
  12. Slice the rested turkey breast and serve with warm pan gravy.

Notes

Use a meat thermometer to avoid overcooking; remove turkey at 160°F and let rest to reach 165°F. Loosen skin carefully to get herb butter underneath for moist meat. For crispier skin, broil 1-2 minutes at the end but watch closely. For gluten-free gravy, substitute flour with cornstarch or arrowroot powder.
