  • 6 large eggs (room temperature)
  • 2 cups whole milk (475 ml)
  • 1 cup heavy cream (240 ml)
  • 1/3 cup granulated sugar (65 g)
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 8 oz cream cheese (225 g), softened
  • 1/2 cup pure maple syrup (120 ml)
  • 1 cup powdered sugar (120 g)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the custard by whisking together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until smooth and well combined.
  2. Cut brioche loaf into 1 inch thick slices and arrange a single layer in a greased 8×8 inch baking dish.
  3. Pour half the custard evenly over the brioche layer, pressing gently to help absorb. Add another layer of brioche and pour remaining custard over the top. Cover tightly with plastic wrap and refrigerate overnight or at least 8 hours.
  4. Preheat oven to 350°F (175°C). Remove plastic wrap and let dish sit at room temperature for 15 minutes.
  5. Bake uncovered for 45 to 50 minutes until top is golden and custard is set but slightly jiggly in the center.
  6. While baking, prepare the maple cream cheese glaze by beating cream cheese, maple syrup, powdered sugar, and lemon juice until smooth and creamy.
  7. Let French toast cool 5 to 10 minutes after baking. Drizzle glaze over the top or serve on the side. Optionally add fresh berries or powdered sugar before serving.

Notes

Use day-old brioche for best soaking. Tent with foil if browning too quickly. Glaze can be made ahead and stored in fridge up to 3 days. For gluten-free option, use gluten-free brioche or challah. Vegan adaptations possible with substitutions. Reheat leftovers gently in oven at 300°F for 10-15 minutes.
