  • 2 teaspoons fine sea salt
  • 1 tablespoon honey or maple syrup
  • Flaky sea salt, fresh or dried rosemary, cherry tomatoes, olives, sliced garlic, or caramelized onions (optional toppings)

Instructions

  1. Mix the Dough: In a large bowl, combine warm water, sourdough discard, honey, and active dry yeast. Let sit for 5 minutes until foamy. Add bread flour and salt. Mix with a spatula or dough scraper until a shaggy, sticky dough forms. Do not add more flour.
  2. First Rest: Cover the bowl and let rest at room temperature for 30 minutes (autolyse).
  3. The Folds: With a wet hand or dough scraper, stretch and fold the dough over itself 4-6 times, rotating the bowl a quarter turn each time. Cover and rest for 30 minutes. Repeat this folding process two more times (total of 3 sets of folds).
  4. Cold Fermentation: After the last fold, cover the bowl tightly and refrigerate for 8-24 hours.
  5. Panning and Final Proof: Generously coat a 9×13-inch baking pan with olive oil. Turn the cold dough into the pan and gently coax it into the corners. Cover and let proof at room temperature for 2-3 hours until puffy and doubled in size.
  6. Dimple and Top: Preheat oven to 425°F (220°C). Drizzle dough with olive oil and press deep dimples all over with your fingertips. Add toppings and sprinkle with flaky sea salt.
  7. Bake: Bake on the center rack for 25-30 minutes until deep golden brown and hollow-sounding when tapped. Tent with foil if browning too quickly.
  8. Cool: Let cool in the pan for 5 minutes, then transfer to a wire rack. Cool for at least 20 minutes before cutting.
